Specialty products using shrimp on sale at Kagoichi

In September, the Kagoshima Specialty Products Research Institute conducted a survey on trends in specialty products using shrimp.

The survey was prompted by the recent increase of shrimp products at the Kagoshima Specialty Market, Kagoichi, located in Tenmonkan, where sales of such products are also on the rise. The scores were 5 in 2019, 8 in 2020, and 11 in 2021, with the lineup of products using Takaebi (jack-knife shrimp), also known as “sweet shrimp of Satsuma,” increasing in particular.

Besides regular Takaebi products such as dumplings (1,000 yen) and bagged frozen shrimp (850 yen), Kagoichi now offers various products that feature the dashi (soup stock) of shrimp. The market also carries dried Takaebi heads to make a stock, which give a strong, rich flavor unique to the part.

Atsuko Nakajima, a researcher, says: “Amidst coronavirus outbreaks, people may have chosen local specialties to add variety to their home cooking. We hope to continue to promote local products that make the most of the shrimp’s umami flavor.”
